Scouty is Growing Considerably

Scout is probably around 80 pounds by now. He enjoys traveling on brief excursions. He still gets a bit enthusiastic when greeting people, and tends to munch on whatever he sees, but he’s maturing into a wonderful dog. He will turn one next month.

Nutritious Tomato Pepper Soup

I prepare various types of soups like this where I roast a blend of vegetables, onions, garlic, and herbs in the oven, then blend them and incorporate chicken broth, and possibly a blend of dairy. They are incredibly healthy and scrumptious. You can adjust the ingredients to suit your preference.

Roasted Tomato and Pepper Soup

Servings 4 six if you dilute the soup with chix broth
  • 6 to 7
    cups
    tomatoes
    3 to 4 pounds – (any type)
  • 1
    medium white
    or yellow onion, sliced into wedges
  • 5
    cloves
    garlic
    peeled, kept whole
  • 2
    tablespoons
    olive oil
  • 1/2
    teaspoon
    kosher salt
  • 2
    large red bell peppers
  • 1/2
    teaspoon
    black pepper
  • 1/4
    tsp
    dried thyme
  • 1/4 to 1/2
    teaspoon
    red pepper flakes
  • 1/2
    c
    2% milk
    whole milk, or a mix of half and half
  • chix broth to preference
  • 2
    T
    fresh cut basil
  1. Preheat your oven to 400 degrees Fahrenheit. Line an extra large rimmed baking sheet (or two large pans) with foil. Remove stems from larger tomatoes and slice them into wedges. Keep smaller grape or cherry tomatoes whole. You may use only one type of tomatoes if preferred. Place the tomatoes on the baking sheet along with the chopped onion and peppers. Toss with 2 tablespoons of olive oil, 1/2 teaspoon salt, thyme, and garlic cloves until they are thoroughly coated. Arrange them in an even layer.

    Roast the tomatoes, peppers, garlic, and onion for 20 to 25 minutes or until the tomatoes have shriveled slightly, released their juices, and the onion and peppers are soft. The garlic cloves should be slightly caramelized and tender.

    Allow to cool slightly. Pour the entire mixture into a Cuisinart and blend until smooth.

    Transfer the soup to a medium saucepan and gently heat the mixture. At this stage, incorporate chicken broth and preferred milk product to your liking. Serve warm and garnish with fresh basil.
