Carrot Cake

Ingredients:

4 eggs

2 cups sugar

1 cup vegetable oil

2 cups flour

1 teaspoon floor cinnamon

2 teaspoons baking soda

1 teaspoon salt

3 cups carrots, peeled and grated

1/2 cup nuts, chopped

Directions:

Beat eggs, sugar and oil at medium velocity till clean. In a separate bowl, sift collectively flour, cinnamon, baking soda and salt. Add egg combination and blend till blended. Fold carrots and nuts into batter and stir till properly blended. Pour right into a greased and floured 9 x 13-inch baking pan. Bake at 350 levels for 35 to 40 minutes, or till a toothpick inserted within the middle of the cake comes out clear. Let cool.

Frosting elements:

4 ounces cream cheese

1/4 cup butter, at room temperature

In a small bowl, combine cream cheese and butter till properly blended. Add remaining elements and blend properly. Spread over cooled cake.
